Many companies use Credit Card Authorisation forms; photographers, States, hotels etc. Legally it is a kind of promissory note. It is proof of the transaction, authorisation of payment/charge to a specific card, directly from the cardholder. You can ask that they fax over a copy of a DL or other photo id to verify identification. Works for card not present transactions exactly like you would if you were an online merchant.

Another way is to set up a telephone recording system for credit card transactions that save as mp3 or other audio files to your computer. You have to check your state laws though in regards to recording conversations before setting up a system. In some states you can record without the other party knowing, others you have to inform the other party and still others it is illegal to record period no matter who knows.
